Welcome back my lovely people, today I’m talking all things food.
As you all know, I love food. – just can’t resist. I also love reading what I eat in a day posts/watching you tube videos, so I thought I’d do one. I do try and stay relatively healthy on weekdays, purely because I go completely off track at weekends!
Breakfast:
This won’t come as a surprise to any of you… I had porridge for brekkie – I just love it! At the moment I have cacao powder, hemp powder, coconut flakes, maple syrup, seeds of some sort and raisins on my porridge… and you know what? Its delicious! When I say on top… I mean I make the biggest mess popping it all on top and then mixing it up… but its worth it. I also drank aย bottle of water.
Snack:
Today I had the rest of my porridge because I couldn’t finish it all at breakfast. I tend to take my breakfast to work and eat it… not that I’m supposed to… hence why its in a tupperware and not a bowl! I also had a cup of green tea and drank another bottle of water (fyi – i refill the same bottle… I don’t keep buying new ones!)
Lunch:
Recently I have been really into cous cous… it used to be quinoa, but cous cous is just so much easier to cook! I batch cook enough for three day… cous cous, frozen mixed veg, spinach, and at the moment tuna, although it used to be chicken! You gotta vary it a bit… ‘the spice of life’ and everything! I follow this with an apple – because they are my fave. Again, I had a bottle of water with this.
Snack:
At work we have tea break at 11am and 4pm, so today I had a banana at 4… just to keep me going until dinner time! Another cup of tea joined my banana and water.
Tea:
For din dins tonight I made the body coach’s chicken pie, its basically chicken, mushrooms, leeks – I added peas and onions too, mixed with some cream and topped with filo pastry. Super easy to cook, really yummy and hopefully a slightly healthier version of an actual pie!
For pudding I had a cup of green tea – such a pitiful pudding!
& thats all,
Thanks,
Fran, X
I really need to try the Body Coach chicken pie. My friend Lucy raves about it and yours looks so good!

Ah i love cous cous in my salad too, i typically go with all spinach, my fave! I sometimes will use quinoa too! The filo pastry on top of the pot pie looks so yummy, I’ve never used that as a topper, whats the texture, crispy?
